Now my favorite season is Spring & Summer, so I love when it's time to shop. However, this year I'm trying to get into shape and haven't really bought anything. How will I make it!! But I'm hoping to use this as my motivation.

Kitchen Inspiration

So its been a while, but wanted to share some random things I'm watching and that have been on my mind. I have been wanting to do some new things with my kitchen, but with it being so small (or the fact that it technically is connected to the living room) it is hard to find a nice design.

Blizzard Warning

So I'm still around just trying to work on non-blog related stuff. I know no fun, but sometimes it happens.

Today we were called off work because of a pending Blizzard Warning and you would think I would get a ton done, but Dave had to go to the hospital and have some X-rays done... He's fine, but still spent all day there.

Why isn't there just a day you can stop time and get everything you need to get done DONE! Wishful thinking I guess. This new year has just been one big blurry mess. Hopefully I can straighten it out soon!

I know I have been missing for a while, but I've had some issues with my wisdom teeth removal. Yes I had dry sockets. So I'm still in the healing stage.

One of my New Year's resolutions was to make this blog something great, so I'm working hard behind the scenes to do that!!

One Crazy Year

So I know it isn't New Years Eve yet, but it has been one crazy holiday & year! I hope everyone had a good holiday, I sure did, but why doesn't it last longer?

I will try and share my gifts with you this weekend. My husband got me a wonderfully adorable rain jacket that I must share!

HOWEVER, I am having my wisdom teeth, yes all 4, taken out this Friday. Yes, New Years Eve, so I don't know what I will be capable of this weekend. I know, I know why New Years Eve... well my new insurance doesn't offer dental and while I have 2 I need to get it done. I was putting it off FOREVER, so might as well get it over with, right?! Any advice for the extremely nervous?

Partners for Pets

When I think of November I think ofa time of giving. So today I wanted to spotlight a charity that is dear to my heart: Partners for Pets. They are the place that gave me my sweet Sprocket.

I have tried to help Partners for Pets as much as I can and every time I see them in PetSmart, I always empty my purse just for them. I hope you do the same, whether it is for them or a different pet charity you feel strongly about!

Break

I wanted to post today to let everyone know that I will be taking a short break due to some recent health issues. Nothing major just a little pesky kidney stone. It has been causing me pain for the past couple of days and I can't do much of anything.

So like I said I will be taking a little break. I just wanted to let everyone know so you don't think I fell off the earth!!

Chicago

How was everyone's Halloween? Mine was fun. I didn't dress up (I know, I know) but we took a little road trip up to Chicago. We had never been and have talked about doing it for a while now... so we figured why not!

We visited the Muesum of Science & Industry, the Field Museum, the Shedd Aquarium, the Adler Planetarium and the John Handcock Observatory... whew. We drove up Thursday night after work and came home on Sunday. So we jam packed our 2 days there!

They also celebrate Halloween all month long... my kind of town. I'm already planning our trip for next year!

Hope everyone had a great weekend and some awesome memories!!

Baking: Pumpkin Biscotti

So I'm not a big pumpkin or biscotti fan, but my husband is. So the other day I did a search and found the perfect recipe for Pumpkin Biscotti and wanted to share it with you.

Pumpkin Biscotti

Ingredients
2 1/2 cups of flour
1 cup of sugar
1 teaspoon of baking powder
1 teaspoon of cinnamon
1/2 teaspoon of nutmeg
Pinch of ginger
Pinch of ground cloves
Pinch of salt
2 eggs
1/2 cup pumpkin puree
1 teaspoon of vanilla extract

Directions
1. Preheat oven to 350 F. Sift together the flour, salt, sugar, baking powder, and spices into a large bowl.

2. In another bowl, whisk together the eggs, pumpkin puree and vanilla extract. Pour the pumpkin mixture into the flour mixture. Give it a rough stir to gently incorporate the ingrediets, the dough will be crumbly.

3. Flour your hands and a clean surface and lightly knead the dough. Lightly grease a baking sheet or line it with parchment paper. Form the dough into a large log, roughly about 15-20 inches by 6-7 inches. The loaves should be relatively flat, only about 1/2 inch high. Bake for 22-30 mintues at 350 F, until the center is firm to the touch.

4. Let biscotti cool for 15 minutes and then using a serrrated knife cut into 1 inch wide pieces. Turn the oven to 300 F and bake for an additional 15-20 minutes. Cool completely.

5. Serve and Enjoy!

Spooky Wedding

When I got married everyone was surprised that it was in August and not October. My love for Halloween is undeniable... so of course after hearing this, I started to think what would I have done if it were in October? Would I have gone for an pumpkin theme or would I have gone all out with an actual Halloween theme? Don't mind my sketches, but here is what I came up with:

Pumpkin Decorating

Pumpkins aren’t just carved with scary faces anymore, now they are spray painted, glittered or wrapped in ribbons to make them a little more glam!

This year I too am going in the glam direction with paint and glitter!!

To start I have purchased some fake pumpkins from Micheals (I want to be able to reuse them) plus my supplies.

Paint, glitter, glue, sponge brush

To make sure I don't make a mess, I laid out all my supplies and then laid down some paper bags. I wanted to keep my pumpkins simple and not go overboard with my glitter, so I decided I would paint them with a Metallic Copper and then sprinkle some gold & copper glitter onto them. (As you'll see from the photos I took a different route on 1 pumpkin, but more on that later)

To help conserve paint, I poured it directly onto the pumpkin and sponged it into all the grooves first for the best coverage. I continued this process until the entire pumpkin was covered. Next I sprinkled on the glitter and let it dry.

On this pumpkin, however, I tried something different. I first applied the glue directly to the pumpkin then sponged it all over. Next I sprinkled on the glitter. After it was dried I just didn't like the look, so I painted over it with the Metallic Copper and then sprinkled on more glitter. I do have to say this pumpkin came out looking the best!!

My finished product. I had 4 pumpkins total. A tall one, two medium round ones and a little one. I started wanting to do something different to each, but ended with doing the same thing to each one...

I love how the pumpkins came out, they have a more natural color, but with a little shimmer!! What do you think?

So I am a fan and a regular at our local library, I love to wander around all the different topics to see what may jump out at me to read. Mainly I stick with cookbooks and party-planning related topics, but the other day I just happen to be in the computer section (which doesn’t typically have anything current) when I came across a book about blogging.

Curious about what it was hiding inside I took it home. Now I know about blogs and have visited blogs, but did I ever really think what I wanted my blog to be or what direction I wanted it to go in… no, not really, until I started reading this book, “Blogging for Bliss – Crafting Your Own Online Journal.”

It has given me some great inspiration and information. It really has made me think, what do I want my blog to do, what do I want to do? I may still not know for sure, but it sure has helped in motiviating me to start thinking about it.

First Day of Autumn

Now I’m not a cold weather person, I’m a 100% summer girl, but I have to admit that I do love the activities that come with fall and winter. So I have created my fall to do list, my summer one didn’t fare so well, but I hope that fall is a little better! On to the list:

Decorate pumpkins
Make Halloween costumes
Have a family Thanksgiving
Drink hot spiced wine (I think I found the perfect recipe)
Decorate the perfect Christmas tree
Admire Christmas lights
Drink hot cocoa after having a snowball fight

I have to share with you my recent purchase.

But first I have to tell you the story… I have wanted a cute pair of rain boots for a long time, but being only 5 foot with a size 6 ½ foot and having a BIG calf made it very difficult to find a pair that fit. Until I was at Bass Pro Shop with my husband and I saw this adorable pair that almost looked like a wetsuit. So I wishfully tried them on and it was like the clouds formed and rain started pouring down – THEY FIT!! The only downside was they were $90 and Dave said, “No Way. Not for a pair of boots. I’ll get you some from work.” (Those hideously ugly big yellow ones made for walking in concrete – no thanks!) So I had to leave those wonderful boots behind.
So I decided with Christmas getting close I would add them to my list, but when I saw them online again I told Dave how perfect they were and how much I wanted them now BEFORE it started getting bad. He finally gave in and said okay, for an early gift. So I ordered them from Endless.com (Shameless plug) on Friday, got them on Saturday and have been hoping for rain ever since!

Labor Day

I wanted to take to today to thank all those people who roll up their sleeves and get the job done.

I would especially like to thank my husband, Dave. As you may or may not know Dave is a carpenter and with this whole bad economy he hasn't been working much lately. But we have gotten lucky and after we got back from vacation, he went back to work. And has been working hard... around 60 hours a week. Now no one wants their spouse to work like crazy, but Dave is doing it for us. And for that I thank him!

New Laptop

Vacation, Work & Computers... OH MY!

So I am back from Hawaii, but I have been a little busy. I'm back to work and back to reality. Plus my ancient dinosaur of a computer is running so slow that it makes it almost impossible to get anything done, so I have to spend my lunch break trying to catch up!!

Hopefully with this weekend being the back-to-school tax free weekend, we will be able to buy a new laptop, but I have no idea what kind of computer to get and how much I want to spend. So I'm trying to reasearch in between everything else!

But don't despair I should be back to my normal groove soon. And I'm hoping to expand my blog to include more, so lookout!

I'm excited because this Thursday my mom is taking me to see Wicked! Has anyone seen it? I've heard nothing but great things so I can't wait.

Also I'm getting into the last week before we leave for Hawaii! Something else I can't wait for!! But now it's down to making sure I have our bills paid, our paperwork printed and our bags packed. We will be gone for 2 weeks and thats a long time! I just keep hoping I don't miss something.

My Summer List

So while I was checking out some of the blogs I love, I found the 'Rules of Summer' posted by Emily at Cupcakes and Cashmere. I of course love to make lists and thought to myself, what better way to get motivated to have some summer fun then to have a list of all the things I want to do!

I know we've been super busy planning for Hawaii and Dave working 10 hour days, but there is always time for summer fun. So on to my list...

Summer Must-do List:
1. Attend a FREE outdoor concert at the Botanical Gardens & the Zoo.
2. Make some homemade strawberry lemonade
3. Go on a picnic with my husband
4. Boat (Our boat is currently being worked on and we are going crazy!)
5. Go on a float trip
6. Work on more graphics and posts for the blog

I'm sure more things will get added to this list as the days go on, but this is what is on my mind right now. What are you wanting or planning to do this summer?

4th of July

This summer is just flying by and I feel (or know for that matter) that I haven't been to one great summer party yet! Maybe it's the fact we are soon going to Hawaii and aren't leaving the house much or maybe it's just the economy has everyone in overdrive to work as much as they can and forego the partys! Whatever it may be I have my heart set on the 4th of July. We usually attend a wonderful neighborhood fireworks display and I look forward to it again this year. All the neighbors (this is not our neighborhood!) gather and bring great dishes and set up picnic tables and hang lanterns from the trees, then when it starts to get dark they haul all their chairs over to the pond where they pass out bugspray and fish before the show starts. And they have a show. Not what you would expect for a neighborhood, but they really know how to celebrate.

Anyways, after all my rambles I wanted to share some patriotic 4th of July ideas. My favorite is the 'firework' candles. Super cute. Enjoy!

Memorial Day Weekend

So this weekend is the famous summer kick-off - Memorial Day Weekend! On Friday our town is having a free movie night in the park, which I am actually looking forward too. The movie choice is "Cloudy with a Chance of Meatballs." My mom and brother are going to come down and join. So we'll have some nice family fun.

On Saturday we might have a backyard bbq. We would set up some games like volleyball or crouquet. We would have some normal bbq fare with hamburgers and hot dogs. Lots of water and snacks would be spread around. And we'd have some good old summer fun. I look forward to the summer kick-off every year. I'm ready for the memories to be made!!

I know I still have around 2 months until we go to Hawaii, but I'm such a planner that I like to even have visuals!! I hate having that feeling I have forgotten something behind, so with this image it helps me make sure I have everything on my list when I start packing.

Picnic Recipes

White Wine Sangria

Ingredients
1 small orange
1 red apple
1 cup sliced fresh strawberries
1 750-ml bottle (3-1/4 cups) dry white wine or 3 cups white grape juice, chilled
2 cups lemon-lime carbonated beverage, chilled
Whole fresh strawberries (optional)
Apple slices (optional)

Directions
1. Cut the orange in half and cut into thin slices (do not peel); remove any seeds.
2. Cut the apple in half, core, and thinly slice.
3. Fill pitcher half full with ice. Pour wine and lemon-lime beverage atop; add fruit and stir gently.
4. Garnish glasses with whole berries and apple slices, if desired. Serve immediately. Makes 8 to 10 servings.

** To transport this sangria to a picnic, place fruit and wine in a 2-quart vacuum bottle. Fill pitcher half full with ice. Pour wine and fruit mixture and lemon-lime beverage atop; stir gently. Serve as above.

Chicken Bacon Sandwiches

Ingredients
8 strip(s) Applewood smoked bacon
1 pound(s) boneless, skinless chicken breast
1 teaspoon(s) sea salt
1/2 teaspoon(s) ground black pepper
1 1/2 teaspoon(s) wasabi powder
1 teaspoon(s) lemon juice
1/2 cup(s) mayonnaise
12 slice(s) (thin) pullman bread
1 bunch(es) watercress
1/4 red onion, sliced into rings
1 medium beefsteak tomato

Directions
1. Heat oven to 350 degrees F.
2. Fit a wire rack on a baking pan and place bacon strips in a single layer. Bake for 20 minutes, turn bacon strips, and continue to cook until brown and just crisp -- about 5 minutes more. Transfer bacon to a paper towel-lined plate to drain excess grease .
3. Season the chicken on both sides with salt and pepper and place on a lightly oiled baking pan. Bake for 10 minutes at 350 degrees F, turn the meat over, and continue to bake until internal temperature at the center of the breast reaches 167 degrees F -- about 15 minutes more. Transfer chicken to a cutting board and let the meat rest for 15 minutes before slicing into 1/2-inch-thick strips.
4. Cut the beefsteak tomato into eight 1/4-inch-thick slices.
5. Stir wasabi powder and lemon juice together until a paste forms. Blend in the mayonnaise.
6. Store all the ingredients separately until you are ready to create your sandwiches. When you do assemble your sandwiches, first add the mayonnaise. Then place the watercress, chicken slices and red onion on bread. Top with a slice of bread, then layer tomato and bacon. Top with remaining slices of bread, insert toothpicks, and cut into quarter triangles

Birthday Ideas

So my 25th birthday is rapidly approaching (March 30th) and I have no idea what I want to do. I can easily help everyone else plan their parties, but when it comes to my own birthday I draw a blank!

The ONLY idea I have on my mind is a:

Backyard Movie & Martini Night
I doubt the weather would be nice enough for us to do this one, but I've wanted to do a backyard movie night for a while now... hopefully this summer!

With having no idea what to do I have enlisted Dave to plan this one for me. We'll see how that goes.

Okay, so I know I was saying I was going to show you another Hawaiian themed party, but I've been so wrapped up in planning for Hawaii (Yes I do plan that far in advance) that I have been sidetracked by something BETTER!

BENTOS! They are the cutest way to carry food; whether you are taking it for lunch or in my case taking it on a trip! With all the changes in airlines today, food is almost nonexistent or expensive and with Dave alongside I need to make sure HUNGRY stays away. Plus, I don't really want to purchase high-priced unhealthy snacks that won't stay with us long.

So I'm planning on what to take and can't wait to finally packing my first bento!

Hawaiian Themed Going Away Party

So we just booked 2 tickets to Hawaii last night to go and visit our friends who moved there last year. We have been talking about going for what seems like forever and now we have the tickets!!

The excitement of it all has inspired me for a party. Well I have 2 in mind actually - The Hawaiian-themed going away party we did for them and the other... well that's going to be a surprise!

Breakfast Recipes

So today we are continuing on with some yummy breakfast recipes. Both of these recipes are from Panera Bread.

Asiago Bagel Breakfast Bake
This is a great casserole that you can prepare in advance. It makes 8-10 servings.

8 large eggs
1/4 teaspoon salt
2 cups whole milk
1 teaspoon fresh chopped tarragon or 1/2 teaspoon dried
1/4 teaspoon paprika
Freshly ground black pepper, to taste
6 ounces Monterey Jack or medium Cheddar cheese, grated
6 ounces Asiago cheese, grated
4 Asiago cheese bagels

1. In a large mixing bowl, beat together the eggs, salt, milk, tarragon and paprika. Season with pepper.
2. Mix the grated cheeses together in a bowl.
3. Cut the bagels into bite-size pieces.
4. Grease a 2-quart souffle or casserole dish.
5. Starting with the bagel pieces, alternately layer bagel pieces and grated cheese into the dish.
6. Pour the egg mixture evenly over everything, cover the dish and refrigerate overnight.
7. Preheat the oven to 350 degrees.
8. Bake, uncovered, for 1 hour, until the top is golden brown.

Kitchen Sink Brunch Casserole
This is another casserole that can be made the night before. Makes 4-6 servings.

2 tablespoons (1/4 stick) butter, softened
6-8 slices French bread or Sourdough bread, cut into 1/2-inch cubes
1 pound bacon, cooked and crumbled
1/3 cup spinach, cooked, chopped and well drained
1 1/2 cups Cheddar cheese, shredded
5 large eggs, beaten
2 cups half-and-half
1 teaspoon salt
1 teaspoon dried mustard
3 scallions (white and green parts), chopped, for garnish
1 tablespoon fresh parsley, chopped, for garnish

1. Butter a 13x9 - inch pan. Place bread cubes in baking pan. Add bacon and spinach. Top with cheese.
2. Whisk together eggs, half-and-half, salt and dried mustard.
3. Pour over bred mixture, covering thoroughly.
4. Cover baking pan with plastic wrap and refrigerate.
5. Preheat oven to 350 degrees. Remove plastic wrap and bake for 35-45 minutes or until set and brown on top.
6. Garnish with scallions and parsley.

Sunday Brunch

To me breakfast is a great way to enjoy time with family & friends. Plus isn't it the most important meal of the day! So today I wanted to share something we love to do - Breakfast!

We typically just call up our friends, but this time I wanted to do something a little more formal. So here is an invitation I did.

With this image I would probably even add a few embellishments after it was printed. Maybe some rhinestones, but I love simplicity.

Now for decorations, I like flowers, they always make a room feel bright and cheery. However, if you do decorate the table with flowers or candles, choose ones that don't have fragrances. That way, they won't compete with the aroma of the food.

Now I personally like the simplicity of a buffet line, so that is what I would do. It makes it easy for everyone to get exactly what they enjoy and keeps things flowing smoothly.

Now to set up a buffet here are a few tips:
-I personally set everything up on my center island, but it you'd like to use tables you have a few options. Like, if you don't have a long table, put two or three small tables end to end and cover with matching color table clothes.
-Stack plates where guests will start. Place silverware and napkins at the opposite end of the table so guests won't have to hold on to them while serving themselves. Also try wrapping a ribbon around a set to keep it all together so nothing is forgotten.
-Try using cake stands and footed compotes to elevate smaller dishes and make room for larger platters underneath.
-Make sure to provide at least one serving utensil for each dish, so no one has to wait to share a utensil. To protect your linens from stains, place the utensils on saucers near the dish so that guests can rest them there between uses.
-Also try offering food in individual portions to make it easier for guests. Carve meat into slices and ladle soup into mugs before setting them out.

Busy Busy Bee

Plus Dave is going out of town next week and we are trying to get him all packed and ready to go.
